BBQ Beef and Biscuit Casserole

Ingredients:

Ingredient Quantity
Flaky biscuits (canned) 1 (16.3-ounce can, 8 count)
Ground beef 1 pound
Yellow onion 1 small, diced
Barbecue sauce 1 cup
Diced tomatoes (canned) 1 (14.5-ounce can), drained
Colby jack cheese, shredded 1 ½ cups

Instructions:

  1. Preheat your oven to 350°F (190°C) and grease a 9×13 inch baking dish.
  2. Arrange the biscuits in a single layer on the bottom of the prepared dish. Gently press them down to flatten slightly and cover the entire surface.
  3. Bake the biscuits for 10 minutes, or until they are lightly golden brown.
  4. While the biscuits bake, cook the ground beef and diced onion in a large skillet over medium-high heat. Break up the ground beef as it cooks until browned throughout. Drain any excess grease.
  5. Add the barbecue sauce and diced tomatoes to the cooked beef and onion. Stir well to combine.
  6. Pour the hot beef mixture over the partially baked biscuits in the baking dish.
  7. Sprinkle the shredded colby jack cheese evenly over the top of the casserole.
