Baked Mozzarella Stuffed Meatballs

Ingredients:

Ingredient Quantity
Small onion, grated 1
Fresh flat-leaf parsley, chopped 1/2 cup
Grated Parmesan Cheese 2/3 cup
Italian bread crumbs 1/3 cup
Large egg 1
Marinara sauce 2 tablespoons + 1/3 cup
Garlic cloves, minced 3
Crushed red pepper flakes A pinch
Salt and pepper To taste
Ground beef 1.5-2 lbs
Mozzarella cheese, cubed 16 pieces (1/2 inch cubes)

Instructions:

  1. Position the oven rack in the lower 1/3 of the oven.
  2. Preheat the oven to 400 degrees.
  3. In a large bowl, combine onion, parsley, Parmesan cheese, bread crumbs, egg, marinara, garlic, red pepper flakes, salt, and pepper.
  4. Add in the beef, mixing with your hands.
  5. Shape the meat mixture into 16 meatballs.
  6. Make a hole in the center of each meatball and place a cube of mozzarella inside.
  7. Reform the meatball to conceal the cheese.
  8. Spoon 1/3 cup marinara into the bottom of a baking dish.
  9. Place the meatballs inside and drizzle with extra virgin olive oil.
  10. Bake for 15 minutes until cooked through.
