Baked 3 Packet Pot Roast

Ingredients:

Chuck roast (3-4 pounds) 1
Ranch dressing mix 1 packet
Italian dressing mix 1 packet
Brown gravy mix 1 packet
Water or beef broth 1 cup
Olive oil 2 tablespoons
Carrots (4-5 large), peeled and cut into chunks
Potatoes (5-6 medium), peeled and quartered
Onion (1 large), quartered

Instructions:

  1. Preheat oven: Set your oven to 325°F (165°C).
  2. Sear the roast: Heat olive oil in a large oven-safe pot or Dutch oven over medium-high heat. Season the chuck roast with salt and pepper, then sear it on all sides for about 3-4 minutes until browned.
  3. Add vegetables: Remove the roast and set aside. Add the carrots, potatoes, and onion to the pot, stirring to coat with the remaining oil.
  4. Layer the pot: Place the roast back on top of the vegetables.
  5. Make the sauce: In a small bowl, mix together the ranch, Italian, and brown gravy packets with the water or beef broth.
