Step 3: Cut in Butter: Add the 1/4 cup cold, cubed butter to the flour mixture and use a pastry cutter or your fingers to work it in until the mixture resembles coarse crumbs.

Step 4: Add Cheese and Herbs: Stir in the 1 cup shredded cheese and 2 tbsp chopped fresh herbs.

Step 5: Add Milk: Make a well in the center of the mixture and pour in the 3/4 cup milk. Stir until just combined, being careful not to overmix the dough.

Step 6: Shape Dough: Turn the dough out onto a lightly floured surface and gently knead it a few times until it just comes together into a cohesive ball. Pat the dough into a circle about 1 inch thick. Use a sharp knife to cut the dough into 8 even wedges.

Step 7: Bake: Place the wedges on the prepared baking sheet, leaving space between each scone. Brush the tops with the 1 beaten egg for a golden finish. Bake for 15-20 minutes, or until the scones are golden brown and a toothpick inserted into the center comes out clean.

Step 8: Cool and Serve: Allow the scones to cool slightly on a wire rack before serving warm.
