Instructions
- Prepare crust: Mix flour, salt, and sugar in a large bowl. Cut in butter until mixture resembles coarse crumbs. Add ice water gradually until dough comes together. Divide into two disks, wrap, and chill for 30 minutes.
- Make filling: Toss apples with sugars, cinnamon, nutmeg, flour, lemon juice, and vanilla until evenly coated.
- Assemble pie: Preheat oven to 375°F (190°C). Roll one dough disk into a rectangle to fit a 9×13-inch pan. Press into pan with edges hanging over. Spread apple filling evenly. Roll out second dough disk and place on top. Seal and crimp edges. Cut slits for steam.
- Finish: Brush with egg wash and sprinkle with coarse sugar if desired.
