- Preheat Oven & Prepare Dish: Preheat your oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish. Add the 6-7 cubed croissants to the baking dish and spread them into an even layer. Set aside.
- Cook Apple Mixture: Melt the 5 tablespoons butter in a large skillet over medium-low heat. Add the 1 cup brown sugar, 1 teaspoon cinnamon, and ¼ teaspoon nutmeg. Mix until the sugar is dissolved and the mixture is smooth. Add the 4 peeled and diced apples and cook for about 5 minutes, stirring often, until the apples begin to soften. In a small bowl, whisk together the 1 ½ teaspoons cornstarch and 1 tablespoon water. Once fully incorporated, stir this mixture into the apples in the skillet. Stir in the 1 teaspoon lemon juice, then remove the skillet from the heat.
- Make Egg Custard: In a medium bowl, whisk together the ½ cup heavy cream, ½ cup applesauce, 3 eggs, 1 ½ teaspoons vanilla extract, and ½ teaspoon cinnamon until well combined.
- Assemble and Bake: Spoon the prepared apple mixture evenly over the layer of cubed croissants in the baking dish. Carefully pour the egg custard mixture evenly over the apples and croissants. Bake for 35-40 minutes, or until the custard is set and the top is lightly golden.
- Prepare Icing & Serve: While the casserole is baking, prepare the icing. In a small bowl, whisk together the ½ cup powdered sugar, 2 tablespoons heavy cream, and ½ teaspoon vanilla until smooth. Once the casserole is finished baking, remove it from the oven and let it cool for 5 minutes. Drizzle the icing generously over the top of the warm casserole before serving.
