Instructions:

  1. Get the Oven Ready & Prepare Pan: Preheat your oven to 180°C (360°F). Coat a baking pan (e.g., 9×13 inch or a bundt pan) with oil and flour, or line it with parchment paper for easy removal.
  2. Prepare Apples: Dice the 1 medium apple (with the skin still on) into tiny, even pieces. Setting them aside ensures consistent baking.
  3. Combine Wet Ingredients: In a large bowl, whisk together the 3 large eggs and 150 grams (about ¾ cup) sweet cane sugar until the mixture is very light and fluffy. Combine the 180 milliliters (¾ cup) milk, lemon zest (from 1 lemon), 80 milliliters (⅓ cup) seed oil (or an oil with a mild flavor), 1 teaspoon vanilla extract, and a little amount of sea salt. Blend until fully incorporated.
  4. Incorporate Dry Ingredients: Sift the 2 ½ cups (300 grams) all-purpose flour, 10 grams (2 tablespoons) baking powder, and ½ teaspoon ground cinnamon into the wet mixture gradually. Stir gently with a spatula or whisk until just incorporated. Avoid overmixing, as this can lead to a tough cake.
