How To Make Amish Hamburger with Fall Veggies Bake:
Step 1: Prep and Brown: Preheat your oven to 375F (190C). In a large skillet, heat the 1 tbsp olive oil over medium heat. Add the 1 lb ground beef and cook until thoroughly browned. Use a slotted spoon to remove the beef from the pan and set it aside, leaving the drippings in the skillet.

Step 2: Sauté Aromatics: In the same skillet, add the chopped onion and the 2 cloves of minced garlic. Sauté for about 3-4 minutes until the onion becomes translucent and fragrant.

Step 3: Soften Vegetables: Add the 3 cups diced potatoes, 2 cups carrots, and 1 cup celery to the skillet. Cook for approximately 5 minutes, stirring occasionally to let the vegetables pick up flavor from the pan.
Step 4: Combine and Season: Stir in the 1 cup corn kernels, the cooked beef, the 14 1/2 oz can of diced tomatoes (including the juice), and the 1 cup beef broth. Season the mixture with 1 tsp salt, 1/2 tsp black pepper, 1 tsp dried thyme, and 1 tsp dried rosemary.
Step 5: First Bake: Transfer the entire mixture into a greased 9×13-inch baking dish. Cover tightly with aluminum foil and bake in the preheated oven for 30 minutes.
Step 6: Cheese Topping: Remove the foil and sprinkle the 1 cup shredded cheddar cheese evenly over the top. Return to the oven and bake for an additional 10-15 minutes, or until the cheese is melted, bubbly, and slightly golden.
Step 7: Rest and Serve: Let the bake rest for a few minutes before serving. This allows the juices to settle and the flavors to fully meld together.
