Amazing Forgotten Chicken

Ingredients:

Boneless skinless chicken breasts 1 lb
Minute rice (white or brown) 2 cups
Cream of mushroom soup 1 can (approx. 10 1/2 oz)
Cream of chicken soup 1 can (approx. 10 1/2 oz)
Water (use one of the empty soup cans) 1 can
Butter 1 tablespoon
Lipton onion soup mix 1 envelope

How To Make Amazing Forgotten Chicken:

Step 1: Prep the Pan: Preheat your oven to 350°F. Use the 1 tablespoon of butter to thoroughly grease a 9×13-inch baking pan.

Step 2: Mix the Rice Base: In a medium mixing bowl, stir together the 1 can of cream of mushroom soup, the 1 can of cream of chicken soup, the 1 can of water, and the 2 cups of Minute rice. Mix until the soups are smooth and the rice is evenly distributed.

Step 3: Assemble: Pour the rice and soup mixture into your buttered baking pan, spreading it out into an even layer. Place the 1 lb of chicken breasts on top of the rice mixture.

Step 4: Season: Open the 1 envelope of Lipton onion soup mix and sprinkle it evenly over the top of the chicken breasts. This provides most of the seasoning and a beautiful golden color as it bakes.

Step 5: Bake: Cover the pan tightly with aluminum foil. This is crucial to trap the steam needed to cook the rice. Bake for 1/1 1/2 hours, or until the chicken is tender and cooked through.
