This hearty casserole is a great weeknight meal – just throw everything in the slow cooker and come back to a delicious and comforting dinner.

Slow Cooker Hobo Casserole

Ingredients

Ingredient Quantity
Ground Beef 1 pound
Onion, chopped 1 medium
Cream of Mushroom Soup 1 can (10.5 oz)
Green Beans, drained 1 can (15 oz)
Corn, drained 1 can (15 oz)
Potatoes, thinly sliced 4-5 medium
Shredded Cheddar Cheese 1 cup
Garlic powder 1 teaspoon
Salt and pepper To taste

Instructions:

  1. Brown the ground beef in a large skillet over medium heat, crumbling it as it cooks. Drain any excess fat.
  2. Add the chopped onion to the skillet and cook until softened, about 4-5 minutes.
  3. In a large bowl, combine the cream of mushroom soup, green beans, corn, garlic powder, salt, and pepper. Stir well.
  4. In your slow cooker, create layers: half the sliced potatoes on the bottom, followed by half the soup mixture, and then half of the browned ground beef and onion mixture.
  5. Repeat the layers with the remaining potatoes, soup mixture, and meat mixture.
  6. Cover the slow cooker and cook on low for 6-7 hours, or until the potatoes are tender when pierced with a fork.
  7. About 30 minutes before serving, sprinkle the shredded cheddar cheese over the top. Recover and cook until the cheese is melted completely.
  8. Serve warm and enjoy!
