Slow Cooker Hobo Casserole
Ingredients

Ground Beef | 1 pound |
Onion, chopped | 1 medium |
Cream of Mushroom Soup | 1 can (10.5 oz) |
Green Beans, drained | 1 can (15 oz) |
Corn, drained | 1 can (15 oz) |
Potatoes, thinly sliced | 4-5 medium |
Shredded Cheddar Cheese | 1 cup |
Garlic powder | 1 teaspoon |
Salt and pepper | To taste |
Instructions:
- Brown the ground beef in a large skillet over medium heat, crumbling it as it cooks. Drain any excess fat.
- Add the chopped onion to the skillet and cook until softened, about 4-5 minutes.
- In a large bowl, combine the cream of mushroom soup, green beans, corn, garlic powder, salt, and pepper. Stir well.
- In your slow cooker, create layers: half the sliced potatoes on the bottom, followed by half the soup mixture, and then half of the browned ground beef and onion mixture.
- Repeat the layers with the remaining potatoes, soup mixture, and meat mixture.
- Cover the slow cooker and cook on low for 6-7 hours, or until the potatoes are tender when pierced with a fork.
- About 30 minutes before serving, sprinkle the shredded cheddar cheese over the top. Recover and cook until the cheese is melted completely.
- Serve warm and enjoy!
