These fluffy fritters are packed with the flavor of Granny Smith or Honey Crisp apples. They’re perfect for a sweet breakfast or a delicious snack.

Ingredients:

Sugar | 1/4 cup |
Baking powder | 2 teaspoons |

Milk | 1/3 cup |

Applesauce | 3 tablespoons |
Granny Smith or Honey Crisp apples, peeled, cored, and diced | 2 large |

For the glaze:

Confectioners’ sugar | 2 cups |
Milk | 1/4 cup |
Vanilla | 1/2 teaspoon |
Instructions:
- Place cooling racks over baking sheets lined with wax paper. Set aside.
- In a medium bowl, whisk together the flour, sugar, baking powder, salt, and cinnamon.
- Make a well in the center and add the milk, eggs, and applesauce. Stir just to combine.
- Fold in the diced apples.
- Heat 1 1/2-2 inches of oil in a heavy cast iron skillet, Dutch oven, or deep fryer to 375°F (190°C).
- Drop about 1/4 cup of batter per fritter into the hot oil, spreading it out as you drop.
- Cook each side until golden brown, approximately 2 minutes per side.
- Remove the fritters to paper towels to drain.
Make the glaze:

- In a large bowl, whisk together the confectioners’ sugar, milk, and vanilla.
- Dunk each fritter in the glaze, turning over to coat both sides.
- Place the fritters on the wire racks to air dry and drip.
