Taco Cupcakes

Ingredients:

Ground Beef (lean recommended) 1 pound
Taco Seasoning 2 tablespoons
Salt (optional) To taste
Diced Tomatoes (drained) (14 oz) can
Wonton Wrappers 24
Shredded Cheddar Cheese 1 1/4 cups
Sour Cream 1/2 cup
Green Onions, Sliced 1/4 cup
Diced Fresh Tomatoes 1/4 cup
Cooking Spray For greasing the muffin tin

Instructions:

  1. Preheat the Oven: Get your oven started by preheating it to 400°F (200°C).

  2. Sautéing the Beef: Heat the olive oil in a large skillet or pan over medium-high heat. Add the ground beef to the pan and use a spatula to break it up as it cooks, stirring constantly.

  3. Taco Time! Add the taco seasoning to the browned ground beef and stir to coat evenly. Season with salt to taste, but keep in mind that some taco seasoning mixes already contain salt.

  4. Adding Moisture: Pour the drained diced tomatoes into the pan with the seasoned ground beef and stir to combine. This adds moisture and extra flavor to the taco filling.

  5. Prepare the Muffin Tin: Lightly coat a 12-cup muffin tin with cooking spray to prevent sticking. This ensures the taco cupcakes can be easily removed after baking.

  6. Wonton Wrappers as Cups: Carefully press one wonton wrapper into the bottom of each muffin cup. You can gently form the wonton wrapper to fit the shape of the cup.

  7. Filling and Cheese: Spoon approximately 1 tablespoon of the seasoned ground beef mixture into each wonton wrapper cup. Top each portion with about 2 teaspoons of shredded cheddar cheese.

  8. Baking to Golden Perfection: Place the filled muffin tin in the preheated oven and bake for 10-15 minutes. The edges of the wonton wrappers should be golden brown, and the cheese should be melted and bubbly.

  9. Cool Slightly: Take the muffin tin out of the oven and let it cool on a wire rack for a few minutes before serving. This allows the filling to set slightly and prevents burning your mouth.
