Coleslaw mix 1 (16 oz) bag
Black beans, rinsed & drained 1 (15 oz) can
Corn kernels, drained 1 (15 oz) can
Diced green chiles or jalapeños 1 (4 oz) can
Red bell pepper, diced 1
Green onion, chopped ⅓ cup
Fresh cilantro, minced 2 tbsp
Fritos 1 (10 oz) bag
Taco seasoning 1 tbsp
Chipotle powder 1–2 tsp
Mayonnaise 1 cup
Lime juice Juice of 1 lime
Kosher salt & black pepper To taste

👩‍🍳 Preparation

  1. Make the Dressing
    In a large serving bowl, whisk together mayonnaise, taco seasoning, chipotle powder, and lime juice. Taste and adjust with more lime or chipotle if needed. Season with salt and pepper.
  2. Build the Slaw
    Add coleslaw mix, black beans, corn, chiles, bell pepper, green onion, and cilantro. Toss until everything is evenly coated.
  3. Chill & Finish
    Refrigerate until ready to serve. Just before serving, stir in Fritos for that signature crunch.
