Better Baked Beans

Ingredients

Base
½ yellow onion, diced
½ pound bacon, cooked and crumbled
1 clove garlic, minced
1 red bell pepper, diced
Sauce
¾ cup ketchup
¼ cup molasses
1 tsp hot sauce (optional)
1 tbsp Worcestershire sauce
1 tbsp yellow mustard
½ tsp black pepper
⅔ cup brown sugar, packed
Beans
15 oz pinto beans, drained & rinsed
15 oz red kidney beans, drained & rinsed
15 oz butter beans, drained & rinsed
15 oz beans in tomato sauce

Instructions

1. Preheat Oven

  • Set oven to 375°F (190°C).

2. Cook Bacon

  • In a heavy skillet, cook bacon until crisp.
  • Set aside to cool, then crumble.
  • Drain half the grease.

3. Sauté Vegetables

  • Add onion and bell pepper to the skillet.
  • Sauté until softened.
  • Stir in garlic and cook gently for about 30 minutes.

4. Mix the Beans

  • In a large bowl, combine sautéed vegetables, seasonings, sauce ingredients, and all four types of beans.
  • Stir in half the crumbled bacon.

5. Bake

  • Transfer mixture to a baking dish.
  • Cover with foil and bake for 1 hour.

6. Finish

  • Remove foil, sprinkle remaining bacon on top.
  • Bake uncovered for 10 minutes more until bubbly and golden.
