Hamburger Potato Casserole

Ingredients

Yukon gold potatoes 2.5 lbs (8–9 medium) Thinly sliced
Lean ground beef 2 lbs Browned
Sweet yellow onion 1 cup Finely diced
Garlic 1 tbsp Minced
Cream of mushroom soup 10.5 oz Any brand
Half and half 1 cup Creamy base
Onion powder 1 tbsp Seasoning
Kosher salt 1½ tsp To taste
Black pepper 1 tsp Freshly cracked
Colby Jack cheese 3 cups Freshly shredded, divided

Instructions

  1. Prep Potatoes
    Slice potatoes thinly (⅛ inch). Place in water to prevent browning.
  2. Preheat Oven
    Heat to 350°F (177°C). Grease a 9×13‑inch baking dish.
  3. Cook Beef Mixture
    In a Dutch oven or large pan, brown beef with onion and garlic over medium‑high. Drain excess fat.
  4. Make Sauce
    In a bowl, whisk mushroom soup, half and half, onion powder, salt, and pepper until smooth.
  5. Layer Casserole
    Drain potatoes. Layer ⅓ potatoes in dish, then ⅓ beef mixture, ¾ cup cheese, and ⅓ sauce. Repeat layers.
  6. Final Layer
    Top with remaining potatoes, beef, sauce, and 1½ cups cheese.
  7. Bake
    Cover with foil. Bake 1 hour 10 minutes. Remove foil and bake 20 minutes more until bubbly and golden.
  8. Rest & Serve
    Let sit 15 minutes before serving—it will be very hot.
