Pickle Bites

These little bites are pure Midwestern game‑day nostalgia. My dad made a tray every Sunday before kickoff, and no matter how much he doubled the batch, they were gone before halftime. Thick, crunchy dill pickle slices wrapped in cool cream cheese and salty deli ham deliver the perfect mix of tangy, creamy, and savory in one bite.

They’re budget‑friendly, require no cooking, and come together in minutes—ideal for busy weekends, casual parties, or a quick high‑protein snack. Serve them well‑chilled on a simple white platter so the pale green pickles and pink ham stand out. Pair with deviled eggs, cheese cubes, or mixed nuts for a low‑carb spread, or add a veggie tray and chicken wings for a fuller game‑day table. A crisp lager, light beer, or sparkling water with lemon rounds out the salty, tangy flavors beautifully.

Ingredients
| Ingredient | Amount | Notes |
|---|---|---|
| Dill pickles | 12 slices (½‑inch thick, ~1 cup) | Pat dry |
| Cream cheese | 4 oz | Softened |
| Deli ham | 6 slices | Thin to medium thickness |
Directions
- Dry Pickles
Pat pickle slices very dry with towels to help cream cheese stick and prevent excess moisture. - Prep Work Area
Place pickles on a board. Lay out ham slices. Soften cream cheese slightly if firm. - Spread Cream Cheese
Coat each ham slice with a thin, even layer of cream cheese (about ⅔–¾ tbsp per slice). - Wrap Pickles
Place 2 pickle slices along the short edge of each ham slice. Roll tightly to enclose. You’ll have 6 rolls total. - Chill
Place seam‑side down on a plate. Refrigerate 15–20 minutes for cleaner slicing. - Slice & Serve
Cut each roll into 3–4 bite‑size pieces. Arrange cut‑side up on a platter. Serve immediately, or chill up to 4 hours. Keep cold if transporting.
