Slow Cooker Beef Bourguignon 🍷🥘

Ingredients

Ingredient Amount Notes
Bacon 5 slices, chopped Adds smoky flavor
Beef chuck roast 3 lbs, cut into 1-inch chunks Stew meat
Salt & pepper To taste For seasoning
Red cooking wine 1 cup Depth of flavor
Broth (chicken or beef) 2 cups Base liquid
Tomato sauce ½ cup Richness
Soy sauce ¼ cup Umami
Flour ¼ cup Thickener
Garlic 3 cloves, chopped Flavor
Thyme 2 tbsp fresh or 2 tsp dried Herb
Carrots 5, cut into chunks Sweetness
Baby potatoes 1 lb, whole Hearty texture
Mushrooms 8 oz, halved Earthiness
Fresh parsley For garnish Optional

Instructions

  1. Cook bacon: In a large pan, cook chopped bacon until crispy. Transfer to slow cooker.
  2. Brown beef: Season beef chunks with salt and pepper. Brown in bacon grease, 2–3 minutes per side. Add to slow cooker.
  3. Deglaze pan: Pour wine into hot pan, scraping up browned bits. Let bubble for 1 minute. Stir in broth, tomato sauce, soy sauce, and flour until smooth. Pour into slow cooker.
  4. Add vegetables & herbs: Stir in garlic, thyme, carrots, potatoes, and mushrooms.
  5. Slow cook: Cover and cook on LOW for 8 hours, until beef is tender.
  6. Finish & serve: Taste and adjust seasoning. Garnish with parsley if desired. Serve in bowls, over mashed potatoes, or with crusty bread for dipping.
