Ingredients

For the Chicken Amount
Chicken breasts, boneless & skinless 4
Bacon slices 8
Olive oil 1 tbsp
Salt ½ tsp
Black pepper ½ tsp
Paprika ½ tsp
Garlic powder ½ tsp
For the Filling Amount
Cream cheese, softened 4 oz
Shredded mozzarella or cheddar ½ cup
Fresh spinach, finely chopped 1 cup
Bacon bits (optional) 2 tbsp
Italian seasoning 1 tsp
Fresh parsley, chopped (optional) 1 tbsp

Instructions

1. Preheat Oven

  • Heat oven to 375°F (190°C).
  • Lightly grease a baking dish.

2. Make the Filling

  • In a bowl, mix cream cheese, shredded cheese, spinach, bacon bits, Italian seasoning, and parsley until smooth.

3. Prep the Chicken

  • Cut a pocket into the side of each chicken breast (don’t slice all the way through).
  • Rub with olive oil, salt, pepper, paprika, and garlic powder.

4. Stuff & Wrap

  • Spoon filling into each chicken pocket.
  • Wrap each breast with 2 slices of bacon, securing with toothpicks if needed.

5. Bake

  • Place seam-side down in the baking dish.
  • Bake uncovered 30–35 minutes, until chicken reaches 165°F (74°C) and bacon is crisp.

6. Optional Crisp Finish

  • Broil 2–3 minutes for extra crispy bacon.

7. Rest & Serve

  • Let rest 5 minutes before serving.

Notes

  • Works beautifully with mozzarella for stretch or cheddar for sharpness.
  • Toothpicks help keep bacon in place during baking.
