How To Make Pineapple Bliss Bars:
Step 1: Prep the Oven and Pan: Preheat your oven to 350°F. Line a 9×13-inch baking pan with parchment paper, leaving a little overhang on the sides to make the bars easier to lift out later.

Step 2: Prepare the Crust: In a medium bowl, whisk together the 1 1/2 cups of flour, 1/2 cup of sugar, and 1/4 tsp of salt. Using a pastry cutter or two forks, cut in the 3/4 cup of cold, cubed butter until the mixture looks like coarse crumbs. Press this mixture firmly and evenly into the bottom of your prepared pan.

Step 3: First Bake: Bake the crust for 15 minutes or until the edges are just lightly golden. Remove from the oven and let it cool slightly while you prepare the topping.
Step 4: Create the Pineapple Filling: In a separate bowl, whisk the 2 large eggs and 1 cup of sugar together until smooth. Stir in the 1/4 cup of flour, 1/2 tsp of baking powder, and 1 tsp of vanilla. Finally, gently fold in the 1 cup of well-drained crushed pineapple.
Step 5: Final Bake: Pour the pineapple mixture evenly over the warm crust. Return the pan to the oven and bake for another 25–30 minutes. The bars are done when the center is set and the edges are golden brown.
Step 6: Cool and Dust: Allow the bars to cool completely in the pan; this is essential for the filling to set properly for slicing. Once cooled, dust the top generously with powdered sugar and cut into squares.
