Cherry Crumble Bars

These bars feature a buttery, soft shortbread crust and a crumbly oat topping, sandwiching a sweet and tart layer of canned cherry pie filling.

Cherry Crumble Bars

Ingredients:

Sugar 1 1/2 cups
Baking powder 1 1/2 teaspoons
All-purpose flour 4 1/2 cups
Unsalted sweet cream butter, softened 1 cup
Eggs 2
Pure vanilla extract 2 teaspoons
Almond extract 1 teaspoon
Old fashioned rolled oats 2/3 cup
Cherry pie filling 2 cans (21 ounces each)

How To Make Cherry Crumble Bars:

Step 1: Prep Oven and Pan: Preheat oven to 350F (175C). Line a 9×13 baking dish with parchment paper and set aside.

Step 2: Make Crumb Base: In a medium bowl, whisk together 1 1/2 cups sugar, 1 1/2 tsp baking powder, and 4 1/2 cups flour. Cut in 1 cup softened butter with a fork or your fingers until the mixture is crumbly.

Step 3: Add Wet Ingredients: In a small bowl, whisk together 2 eggs, 2 tsp vanilla extract, and 1 tsp almond extract. Slowly stir the egg mixture into the flour/butter crumb mixture until just combined.

Step 4: Reserve Topping: Remove 1 1/2 cups of the crumb mixture to another bowl. Stir in 2/3 cup old fashioned rolled oats into this reserved portion and set aside (this is the topping).

Step 5: Assemble Bars: Press the main crumb mixture (the portion without oats) gently into the bottom of the prepared 9×13 baking dish to form the crust. Top this crust evenly with the contents of the two 21 oz cans of cherry pie filling. Finally, sprinkle the reserved oat-crumb mixture evenly over the cherry filling.

Step 6: Bake and Cool: Bake for 55-60 minutes or until the topping is lightly browned.
