Southern Sausage Biscuits

This classic Southern breakfast combines flaky, buttermilk biscuits made from scratch with savory sausage patties and an optional slice of melted cheese.

How To Make Southern Sausage Biscuits:
Step 1: Prep Biscuit Dough: Preheat oven to 425F (220C). In a mixing bowl, whisk together 2 cups flour, 1 tbsp baking powder, 1/2 tsp baking soda, and 1 tsp salt. Cut in 6 tbsp cold butter using a pastry cutter or fork until mixture resembles coarse crumbs with pea-sized butter pieces.

Step 2: Form and Cut Dough: Stir in 3/4 cup cold buttermilk until dough just comes together – do not overmix. Turn dough onto a floured surface and gently fold a few times. Roll to 1-inch thickness and cut into rounds with a biscuit cutter. Place on a baking sheet.

Step 3: Bake Biscuits: Bake for 12-15 minutes until golden brown on top.
Step 4: Cook Sausage: While biscuits bake, shape 1 lb breakfast sausage into patties slightly larger than the biscuits (they will shrink). Cook in a skillet over medium heat for 3-4 minutes per side until browned and fully cooked through. Drain on paper towels.
Step 5: Assemble and Serve: Split warm biscuits in half horizontally. Place a sausage patty inside each biscuit. Add a slice of cheese if desired while the biscuit and sausage are still warm so it melts slightly. Top with the other biscuit half and serve immediately while hot.
