How To Make Buttermilk Biscuits Topped With Honey Butter:
Step 1: Mixing the Flour and Butter: In a large bowl, blend the 2 cups self-rising flour (and 1/2 tsp salt, if using) and the 3/4 stick of grated frozen butter until the mixture resembles coarse cornmeal.

Step 2: Incorporating Buttermilk: Add the 1 cup cold buttermilk to the flour-butter mixture. Use a spoon or spatula to combine until a cohesive, shaggy dough forms.

Step 3: Folding and Cutting: Turn the dough onto a lightly floured, clean counter. Knead the dough just enough to bring it together, then fold it over on itself at least 5 times (this creates flaky layers). Cut out biscuits using a 2 1/2-inch cookie cutter (do not twist the cutter).
Step 4: Baking: Place the cut biscuits in a greased baking pan, ensuring the sides are lightly touching (this helps them rise straight). Bake at 375F (190C) for 18 to 20 minutes until the tops are golden brown.
