Old Fashioned Rice Pudding

Old Fashioned Rice Pudding
Ingredients:

| Cooked white rice (leftover is great) | 1/1/2 cups |
| Whole milk, divided | 2 cups |
| White sugar | 1/3 cup |
| Large egg, beaten | 1 |
| Unsalted butter | 1 tablespoon |
| Vanilla extract | 1/2 teaspoon |
| Salt | Pinch |
| Golden raisins (optional) | 2/3 cup |
| Ground cinnamon or nutmeg (for garnish) | To taste |
How To Make Old Fashioned Rice Pudding:
Step 1: Start the Cook: In a medium saucepan, place the 1 1/2 cups of cooked rice. Add 1 1/2 cups of the milk and the pinch of salt.

Step 2: Thicken Mixture: Cook the mixture over medium heat, stirring frequently, until it becomes thick and creamy, which should take about 15 to 20 minutes. Keep the heat low enough to prevent scorching.

Step 3: Temper the Egg: In a small separate bowl, whisk together the remaining 1/2 cup of milk, the 1/3 cup sugar, and the 1 beaten egg. To prevent scrambling, slowly pour about 1/2 cup of the hot rice mixture into the egg mixture while whisking constantly.
Step 4: Combine and Finish Cook: Pour the tempered egg mixture back into the saucepan with the remaining rice pudding. Continue cooking and stirring continuously over low heat for another 2 to 3 minutes, or until the pudding is well blended and slightly thickened (do not boil).
Step 5: Flavor and Serve: Remove the saucepan from the heat. Stir in the 1 tablespoon of butter, 1/2 teaspoon of vanilla extract, and the 2/3 cup of golden raisins (if using).
Step 6: Cool and Garnish: Serve warm, or chill completely for a cold pudding. Sprinkle with ground cinnamon or nutmeg before serving.
