Brown Sugar and Bacon Baked Beans

Ingredients:

Bacon slices (halved) 10
Yellow onion (finely diced) 1
Green bell pepper (finely diced) 1/2
Pork and beans 1 can (54 oz)
Ketchup 4 Tbsp
Molasses 1/4 cup
Brown sugar 2/3 cup
Cider vinegar 1/4 cup
Dry mustard 2 tsp

How To Make Brown Sugar and Bacon Baked Beans:

  1. Step 1: Bacon Preparation: Cook 10 bacon slices halfway through (they should still be pliable). Set them aside to drain on a paper towel, but reserve 2 Tbsp of the bacon grease in a deep skillet.
  2. Step 2: Oven Preheating and Prep: Preheat the oven to 325 degrees F (160 degrees C) and set the rack to the lower-middle position. Lightly grease a 13×9 baking dish.
  3. Step 3: Sautéing Vegetables: Heat the 2 Tbsp bacon grease (or butter) in the deep skillet over medium heat. Add the diced onion and green pepper, sautéing for about 5 minutes until softened.
  4. Step 4: Mixing and Simmering: Add the 1 can (54 oz) pork and beans and all remaining ingredients: 4 Tbsp ketchup, 1/4 cup molasses, 2/3 cup brown sugar, 1/4 cup cider vinegar, and 2 tsp dry mustard. Stir well to combine. Let the mixture simmer for a minute or so.
  5. Step 5: Baking Time: Pour the bean mixture into the prepared baking dish. Lay the halved, cooked bacon slices on top. Bake for 2-3 hours, depending on your desired consistency (longer for thicker, more concentrated flavor).
