How To Make Laura Bush’s Cowboy Cookies:
- Step 1: Preheat and Combine Dry Ingredients: Preheat your oven to 350°F (175°C). In a medium bowl, combine the all-purpose flour, baking powder, baking soda, ground cinnamon, and salt. Mix well and set aside.
- Step 2: Cream Butter and Sugars: In a separate very large bowl, use an electric mixer to beat the butter until creamy. Gradually add the granulated sugar and light-brown sugar, mixing until thoroughly combined.
- Step 3: Add Eggs and Vanilla: Add the eggs one at a time, beating after each addition. Mix in the vanilla extract.
- Step 4: Combine Wet and Dry: Gradually add the flour mixture to the wet ingredients, beating on low speed until just combined. Do not overmix.
- Step 5: Stir in Mix-ins: Stir in the semisweet chocolate chips, old-fashioned rolled oats, sweetened flake coconut, and chopped pecans until evenly distributed throughout the dough.
