This Easy Taco Lasagna is a fun, Tex-Mex twist on the classic casserole, using soft flour tortillas instead of pasta sheets. Layers of seasoned ground beef, zesty salsa, creamy sour cream, and plenty of cheese make this a flavorful and satisfying weeknight meal.

Easy Taco Lasagna

Ingredients:

Lean Ground Beef 1 lb
Olive Oil 1 Tbsp
Red Onion (chopped) 1 medium
Garlic (minced) 2 cloves
Taco Seasoning ¼ cup
Flour Tortillas (6-inch) 12
Salsa 24 oz
Sour Cream 1 cup
Shredded Mexican Cheese Blend 3 cups
Water ½ cup (adjust as needed)
Green Chiles (optional) 1 can, drained
Black Beans (drained) 1 can

How To Make Easy Taco Lasagna:

  1. Step 1: Prep and Preheat (10 minutes): Preheat the oven to 375°F (190°C). Finely chop the red onion and mince the garlic cloves.
  2. Step 2: Cook the Beef (10 minutes): Heat the olive oil in a large skillet over medium-high heat. Add the chopped onion and minced garlic and sauté for 3-4 minutes. Add the ground beef and cook, breaking it up, for 5-7 minutes until fully browned. Stir in the taco seasoning and cup of water (adjust as needed). Let it simmer for 2-3 minutes.
  3. Step 3: Assemble the Lasagna (10 minutes):
    • Layer 1 (Bottom): In a 9×13 inch baking dish, spread a thin layer of salsa on the bottom. Top it with four tortillas, overlapping slightly if necessary.
    • Layer 2 (Filling): Spread a third of the cooked beef mixture over the tortillas. Then, layer with a third of the black beans, green chiles (if using), salsa, and shredded cheese.
  4. Step 4: Repeat and Top (5 minutes): Repeat Layer 2 (Beef, Beans, and Cheese) two more times, creating a total of three filling layers. Finish the lasagna with a final layer of shredded cheese on top. Dollop spoonfuls of sour cream evenly over the cheese.
  5. Step 5: Bake and Enjoy (25-35 minutes):
    • Covered Bake: Cover the baking dish with aluminum foil and bake in the preheated oven for 25 minutes.
    • Uncovered Bake: Remove the foil and bake for an additional 10-15 minutes, or until the cheese is melted and bubbly.
    • Cool and Serve: Let the lasagna cool for 10 minutes before slicing and serving.
