One-Pot Lasagna Soup

Ingredients:

Ground Italian Sausage 1 lb
Lasagna Noodles 10
Onion, chopped 1
Jar of Pasta Sauce 24 oz
Garlic, minced 4 teaspoons
Chicken Broth 8 cups
Tomato Paste 2 tablespoons
Can Diced Tomatoes 14 oz
Sugar 1 teaspoon
Balsamic Vinegar 2 teaspoons
Basil 2 teaspoons
Oregano 1 teaspoon
Bay leaf 1
Salt and pepper To taste
Toppings (Parmesan, Mozzarella, or Ricotta) For serving

How To Make One-Pot Lasagna Soup:

  1. Step 1: Brown Meat & Sauté: Add the ground beef, chopped onion, and sausage to a large pot or Dutch oven over medium-high heat. Cook until the meat is completely browned. Drain any excess fat. Return the pot to the stove, mix in the garlic, and sauté for 30 seconds.
  2. Step 2: Simmer Sauce: Pour in the pasta sauce, diced tomatoes, tomato paste, chicken broth, sugar, balsamic vinegar, basil, oregano, bay leaf, and salt and pepper to taste. Cover the pot and bring the mixture to a boil.
  3. Step 3: Cook Noodles: Break the lasagna noodles into smaller pieces and place them in the pot.
  4. Step 4: Finish & Serve: Reduce the heat to medium-low and cook until the noodles have softened (about 15-20 minutes). Remove the bay leaf before serving. Ladle the soup into bowls and top with Parmesan cheese, mozzarella, or a dollop of ricotta before serving.
