How To Make Queso Cauliflower Bake Casserole:
- Preheat & Prep: Preheat your oven to 375°F (190°C) and lightly grease a 9×13-inch baking dish. Add the chopped cauliflower to the prepared dish and spread it out in an even layer. Set aside.
- Make the Cheese Sauce: In a large bowl, add 1 cup of the white Cheddar cheese, mozzarella cheese, and cream cheese. Stir until the cheeses are evenly combined. Add the evaporated milk, diced green chiles, taco seasoning, salt, and garlic powder. Mix until the sauce is smooth.
- Assemble & Bake: Pour the cheese mixture evenly over the cauliflower in the baking dish. Sprinkle the remaining 1 cup of shredded white Cheddar cheese over the top.
- Bake & Serve: Bake for 30-35 minutes, or until the cauliflower is tender and the top is beginning to brown and is bubbly. Garnish with fresh cilantro before serving warm.
