Classic Bread and Butter Pudding

Bread and Butter Pudding

Ingredients (Serves 8):

Ingredient Quantity
Sliced bread 8 slices
Softened butter 2 tablespoons
Raisins ⅓ cup
Cinnamon 2 teaspoons
Milk 1 ½ cups
Heavy whipping cream ¼ cup
Large eggs 2
Granulated sugar ¼ cup (+ extra for topping)

How To Make Bread and Butter Pudding:

  1. Prepare the Bread: Cut the crust off of each slice of bread. Spread softened butter on one side of each slice. Cut the buttered slices in half diagonally to form triangles.
  2. Layer the Pudding: Place a layer of the bread slices, butter-side up, in a well-greased 9×9-inch baking dish. Sprinkle half of the raisins and cinnamon over the layer of bread. Add the second layer of bread on top, and sprinkle with the remaining raisins and cinnamon.
  3. Make the Custard: In a saucepan, gently warm the milk and heavy whipping cream over low heat, but do not allow it to boil. In a separate bowl, whisk together the eggs and granulated sugar. Slowly add a little of the warmed milk mixture to the egg mixture, whisking constantly to temper the eggs. Once the eggs are tempered, whisk the mixture back into the saucepan with the remaining milk.
  4. Soak & Bake: Pour the custard mixture evenly over the bread in the baking dish. Let it sit for 30 minutes to allow the bread to absorb the liquid. Preheat your oven to 350°F (175°C). Sprinkle a little extra granulated sugar over the top of the pudding.
  5. Bake: Bake for 30 minutes, or until the pudding is golden brown and cooked through. The custard should be set and the top should be lightly crispy.
