How to Make Granny Cake:
- Prep Oven & Batter: Preheat your oven to 350°F (175°C) and lightly grease a 9×13-inch baking dish. In a large bowl, whisk together the sugar, flour, baking soda, and salt. Then, mix in the eggs and the crushed pineapples with their juice until just combined.
- Bake the Cake: Pour the batter into the prepared pan. Evenly sprinkle the 1 cup of chopped pecans and 1 cup of brown sugar over the top of the batter. Place the baking dish in the oven and bake for 40-45 minutes, or until a toothpick inserted in the center comes out clean.
- Make the Icing: While the cake is baking, combine the evaporated milk, ½ cup of sugar, and ½ cup of butter in a medium saucepan over medium-high heat. Bring the mixture to a boil, stirring occasionally.
- Pour and Serve: Remove the saucepan from the heat and stir in the 1 teaspoon of vanilla extract. Immediately pour the hot icing evenly over the hot cake. Let the cake cool in the pan for a while so it fully absorbs the icing. Slice, serve, and enjoy!
This cake is best served warm and gooey, but it’s also delicious once fully cooled.
