- Preheat Oven & Prepare Pan: Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish to prevent sticking.
- Combine Wet Ingredients: In a large bowl, mix together the 3 cups brown sugar and 1 ½ cups melted butter until the mixture is smooth and well combined. Add the 3 eggs and 1 tablespoon vanilla extract, and mix until they are fully incorporated.
- Combine Dry Ingredients: In a separate bowl, sift together the 3 ¼ cups flour, 2 teaspoons baking powder, and 2 teaspoons salt.
- Mix & Fold In: Gradually add the sifted dry ingredients to the wet mixture, stirring until just combined. Stir in the 2 cups butterscotch chips and the optional ¾ cup chopped nuts until they are evenly distributed throughout the dough.
- Bake: Transfer the dough to the prepared baking dish and spread it into an even layer. Bake for 55-60 minutes. During the last 15 minutes of baking, cover the dish loosely with aluminum foil to prevent the top from browning too much. The chewies are done when a toothpick inserted into the center comes out clean.
- Cool & Slice: Allow the Butterscotch Chewies to cool completely in the pan before slicing them into bars. This is an important step to ensure they set properly and maintain their shape.
