Irish Coleslaw Recipe:

Ingredients:

Ingredient Quantity
Cabbage, shredded ½ head
Shredded carrots 8 oz (about 3 carrots)
Mayonnaise ¾ cup
Sour cream 2 tablespoons
Dijon mustard 1 teaspoon
Heavy whipping cream 3 tablespoons
Sugar ½ teaspoon
Garlic powder ¼ teaspoon (or to taste)
Onion powder ¼ teaspoon (or to taste)
Salt ¼ teaspoon

Instructions:

  1. Prepare Salad Base & Dressing: In a large bowl, combine the ½ head of shredded cabbage and the 8 oz of shredded carrots. Set this aside. In a smaller bowl, whisk together the ¾ cup mayonnaise, 2 tablespoons sour cream, 1 teaspoon Dijon mustard, 3 tablespoons heavy whipping cream, ½ teaspoon sugar, ¼ teaspoon garlic powder, ¼ teaspoon onion powder, and ¼ teaspoon salt. Whisk until the dressing is smooth and all ingredients are well combined.
  2. Combine & Chill: Pour the prepared dressing over the cabbage and carrot mixture. Toss well to ensure every piece is fully coated with the creamy dressing. Cover the bowl and place it in the refrigerator. Allow the coleslaw to sit and chill for at least 15 minutes before serving. This brief chilling period allows the flavors to fully combine and the cabbage to soften slightly.
  3. Serve & Store: Serve the coleslaw cold. Keep any leftovers covered in the refrigerator.
