Friendship Spaghetti Pie

Ingredients:

Dry spaghetti 1 lb
Lean ground beef 1 lb
Butter 4 tablespoons
Small yellow onion, diced 1/2
Marinara sauce 1 (32 oz) jar
Large eggs, beaten 4
Parmesan cheese, grated 1 cup
Ricotta cheese 1 ½ cups
Garlic, minced 1 clove
Dried basil 1 teaspoon
Mozzarella cheese, grated 2 cups
Kosher salt and freshly ground black pepper To taste
9-inch pie pans (aluminum) 2

Instructions:

  1. Cook Spaghetti: In a large pot of salted boiling water, cook the 1 lb dry spaghetti according to package directions until al dente. Drain thoroughly and immediately stir in the 4 tablespoons butter until melted and coating the spaghetti. Set aside.
  2. Cook Meat Sauce: While the spaghetti cooks, in a large skillet, brown the 1 lb lean ground beef and 1/2 small diced yellow onion over medium-high heat. Cook until the beef is cooked through and no longer pink, and the onion is softened. Drain any excess fat from the skillet, if needed. Stir in the 1 (32 oz) jar marinara sauce and mix well. Remove the skillet from the heat.
  3. Prepare Spaghetti Base: Stir the 4 large beaten eggs and 1 cup grated Parmesan cheese into the drained spaghetti. Season with Kosher salt to taste. Divide this spaghetti mixture evenly between the two 9-inch aluminum pie pans, pressing it gently to form a “crust” on the bottom and up the sides of each pan. Set aside.
  4. Prepare Ricotta Layer: In a medium bowl, stir together the 1 ½ cups ricotta cheese, 1 minced garlic clove, and 1 teaspoon dried basil, along with a pinch of salt. Dollop this ricotta mixture evenly over the spaghetti base in both pie pans, then gently smooth it out to create an even layer.
  5. Layer Meat Sauce and Mozzarella: Top each pie pan with half of the prepared meat sauce, spreading it evenly over the ricotta layer. Follow with half of the 2 cups grated mozzarella cheese sprinkled generously over the meat sauce on each pie.
  6. To Bake or Freeze:
    • If baking immediately: Preheat your oven to 350°F (175°C). Bake the pie(s) until bubbly and the cheese has melted and is lightly golden, about 25 minutes.
    • If freezing: Cover each pie pan tightly with plastic wrap, then wrap again securely with aluminum foil. Freeze until solid. When ready to bake from frozen, increase the baking time to approximately 45 minutes, or until heated through and bubbly.
