- Prepare Bread: Soak the 3 slices of white bread in water for 10 minutes. After soaking, firmly wring out the bread to remove as much water as possible, then discard the water. Set the wrung-out bread aside.
- Prepare Flavor Mixture: Add the 1 small onion (cut into 4ths) and 3-4 pressed garlic cloves to a food processor. Pulse until they are finely minced. Add the 1/4 cup mayonnaise, 1 egg, 1 teaspoon Italian seasoning, 1 teaspoon salt, and 1/2 teaspoon black pepper to the food processor. Pulse again until the mixture is uniform in color and well combined. Add the wrung-out bread (from Step 1) to the food processor. Pulse once more until the bread is fully incorporated and the mixture is well combined.
- Combine with Beef & Form Patties: In a large mixing bowl, combine the prepared flavor mixture (from the food processor) with the 1 ½ lbs ground beef. Mix by hand, or if you prefer, transfer the mixture back to the food processor and change the blade to a mixer attachment (if available). Mix only until just combined; avoid overmixing, as it can make the cutlets tough. Form the mixture into 12 evenly sized balls. Pour the 3/4 cup Italian breadcrumbs into a medium bowl. Roll each beef ball in the breadcrumbs, coating it completely. As you roll, gently flatten each ball to form a small patty, about 1/2 to 3/4 inch thick.
- Cook the Cutlets: Heat a large skillet over medium heat. Add enough olive oil to generously coat the bottom of the pan (about 2-3 tablespoons). Once the oil is hot, carefully place 3-4 cutlets in the pan at a time, being careful not to overcrowd the pan (this allows for better browning). Cook for 3-5 minutes on the first side, until golden brown and crispy. Then, flip the cutlets and cook for an additional 3 minutes on the other side, or until they are cooked through and golden brown. Transfer the cooked cutlets to a paper towel-lined plate to drain any excess oil. Repeat with the remaining cutlets.
- Serve: Transfer the crispy beef cutlets to a serving dish. Serve warm with your favorite accompaniments like crusty bread, mashed potatoes, a fresh green salad, or steamed vegetables.
