This Dorito Casserole takes all the vibrant, zesty flavors of your favorite Tex-Mex dishes and combines them with the irresistible crunch of Doritos into one incredibly satisfying bake. Layers of seasoned ground beef, zesty salsa, creamy sour cream, corn, black beans, and melted cheese, all studded with crushed Nacho Cheese Doritos, create a fun and family-friendly meal that’s bursting with flavor and texture.

Dorito Casserole

Ingredients:

Ingredient Quantity
Ground beef 1 pound
Onion, diced ½ cup
Taco seasoning (or 3 tablespoons homemade) 1 packet
Thick salsa 1 ½ cups
Sour cream 1 cup
Corn 1 cup
Black beans ½ cup
Shredded cheese 2 cups
Crushed Doritos (Nacho Cheese recommended) 4 cups
For Topping:
Topping Quantity
Tomatoes, diced ½ cup
Black olives, diced ½ cup
Green onions, sliced ¼ cup

Instructions:

  1. Preheat Oven & Prep Dish: Preheat the oven to 375°F (190°C). Spray a 9×13-inch baking dish with cooking spray and set aside.
  2. Cook Beef & Onion: Heat a large skillet on medium-high heat. Add the 1 pound ground beef and ½ cup diced onion. Cook for 4-5 minutes, breaking up the meat with a spatula or meat chopper, until the ground beef is browned and the onion is softened. Drain any excess fat from the skillet.
  3. Season Meat: Stir in the 1 packet taco seasoning (or 3 tablespoons homemade) and cook for another minute, stirring to toast the spices and fully incorporate them into the beef.
  4. Add Salsa, Beans & Corn: Add the 1 ½ cups thick salsa, ½ cup black beans, and 1 cup corn to the skillet. Mix until all ingredients are well combined and heated through.
  5. Finish Filling: Turn off the heat. Add the 1 cup sour cream to the meat mixture in the skillet and mix until thoroughly combined and creamy.
  6. Assemble Casserole: Begin layering in the prepared baking dish:
    • Spread 1/3 of the 4 cups crushed Doritos evenly over the bottom of the baking dish.
    • Follow with ½ of the meat mixture, spreading it over the Doritos.
    • Sprinkle 1/3 of the 2 cups shredded cheese over the meat layer.
    • Repeat the process: Add another 1/3 of the crushed Doritos, then the remaining ½ of the meat mixture, and another 1/3 of the shredded cheese.
    • Finally, add the remaining 1/3 of the crushed Doritos on top, followed by the final layer of shredded cheese.
  7. Bake: Cover the baking dish tightly with aluminum foil and bake for 30 minutes. Remove the foil and bake for an additional 15 minutes, or until the cheese is melted, bubbly, and lightly golden, and the casserole is heated through.
  8. Garnish & Serve: Remove from the oven. Top generously with ½ cup diced tomatoes, ½ cup diced black olives, and ¼ cup sliced green onions. Serve warm with optional sides like extra sour cream, salsa, and guacamole for dipping.
