Apple Fritters

Apple Fritters

Ingredients:

Ingredient Quantity
Green Apples 4
Eggs 5
Flax Meal 1/4 cup
Coconut Flour 2 tablespoons
Shredded Coconut 1/4 cup
Cinnamon 1 teaspoon
Nutmeg 1/8 teaspoon
Salt 1/4 teaspoon
Honey 2 tablespoons (optional)
Coconut Oil For frying

Instructions:

  1. Prepare Apples: Using a hand grater, grind the 4 green apples. It’s important to use a hand grater and not a food processor, as a food processor will turn them into applesauce, which we want to avoid. Once grated, pat the apples dry with paper towels to remove excess moisture.
  2. Combine Batter: In a large bowl, combine the dried grated apples with the 5 eggs, 1/4 cup flax meal, 2 tablespoons coconut flour, 1/4 cup shredded coconut, 1 teaspoon cinnamon, 1/8 teaspoon nutmeg, 1/4 teaspoon salt, and the 2 tablespoons honey (if using). Mix all ingredients well until a cohesive batter forms.
  3. Heat Oil: Heat coconut oil generously over medium heat in a heavy-bottomed pan. Ensure there’s enough oil for frying; don’t be shy!
  4. Fry Fritters: Once the oil is hot, add the batter to the pan in large spoonfuls. Fry for 2-3 minutes on one side until golden brown, then flip and cook for another 2-3 minutes on the other side. Watch them closely to prevent burning.
  5. Drain and Serve: Carefully remove the fried fritters from the pan and place them on paper towels to drain any excess oil. Serve hot, optionally drizzled with additional honey and/or with a side of almond butter.
