This Marinated Cucumbers, Onions, and Tomatoes salad is a classic summer side dish, offering a wonderfully refreshing and tangy bite. Marinated Cucumbers, Onions, and Tomatoes

Ingredients:

Ingredient Quantity
Cucumbers, peeled and sliced 1/4 inch thick 3 medium
Onion, sliced and separated into rings 1 medium
Tomatoes, cut into wedges 3 medium
Vinegar 1/2 cup
Sugar 1/4 cup
Water 1 cup
Salt 2 teaspoons
Fresh coarse ground black pepper 1 teaspoon
Oil 1/4 cup
Fresh mint, chopped 1 teaspoon (optional)

Instructions:

  1. Combine Ingredients: To start, get a large bowl. Add the peeled and sliced cucumbers, sliced onion (separated into rings), and tomatoes cut into wedges.
  2. Add Dressing Ingredients: Pour in the 1/2 cup vinegar, 1/4 cup sugar, 1 cup water, 2 teaspoons salt, 1 teaspoon fresh coarse ground black pepper, and 1/4 cup oil. If using, add the 1 teaspoon of chopped fresh mint.
  3. Toss & Marinate: Toss all ingredients well to thoroughly mix and coat the vegetables with the dressing.
