  1. Prepare Pie & Curd: Ensure your lemon curd is cooled and set in your baked pie shell before you begin preparing the meringue.
    • Important Note on Cooling: This recipe uses a fragile lemon curd. While many cornstarch-based lemon pies instruct placing meringue on hot filling, for this curd, it’s best to allow the curd to cool before adding the meringue. If you choose to put it on hot, work quickly to get the pie cooling as fast as possible after adding meringue.
  2. Preheat Oven: Preheat your oven to 375°F (190°C).
  3. Start Meringue: In the bowl of your stand mixer fitted with the whip attachment, place the room temperature egg whites and the 1/2 teaspoon cream of tartar. Begin whipping on medium speed until the egg whites become foamy.
  4. Whip Meringue to Peaks: Gradually increase the mixer speed to high. Once you start to achieve a medium foamy meringue (soft peaks begin to form), slowly start adding in the 3/4 cup (150g) sugar, a tablespoon at a time, allowing it to incorporate before adding more.
