Pepper Jack Potato Casserole Recipe

Pepper Jack Potato Casserole

Ingredients:

Ingredient Quantity
Thinly sliced potatoes 4 cups
Onion, chopped 1
Shredded Pepper Jack cheese 2 cups
Sour cream 1 cup
Milk 1 cup
All-purpose flour 1/4 cup
Butter 1/4 cup
Salt 1 teaspoon
Black pepper 1/2 teaspoon
Garlic powder 1/2 teaspoon
Paprika 1/2 teaspoon (for garnish)

Instructions:

  1. Preheat Oven & Prep Dish: Preheat your oven to 350°F (175°C). Grease a 9×13 inch baking dish.
  2. Layer Potatoes, Onion & Cheese:
    • Layer half of the thinly sliced potatoes evenly at the bottom of the prepared baking dish.
    • Follow with half of the chopped onion.
    • Sprinkle one cup of shredded Pepper Jack cheese over the onion and potatoes.
    • Repeat the layering with the remaining potatoes, onion, and the remaining one cup of Pepper Jack cheese.
  3. Prepare Cream Sauce: In a medium saucepan, melt the 1/4 cup butter over medium heat. Stir in the 1/4 cup all-purpose flour and cook for about 1 minute, stirring constantly, to create a roux. Gradually add the 1 cup milk, stirring continuously with a whisk until the mixture thickens and is smooth.
  4. Season Sauce: Remove the saucepan from the heat. Stir in the sour cream, 1 teaspoon salt, 1/2 teaspoon black pepper, and 1/2 teaspoon garlic powder. Mix until well combined.
  5. Pour Sauce & Bake (Covered): Pour the prepared cream sauce evenly over the layered potatoes and onions in the baking dish. Cover the dish tightly with aluminum foil. Bake in the preheated oven for 60 minutes.
  6. Bake (Uncovered) & Finish: Remove the foil and bake for an additional 20-25 minutes, or until the top is golden brown and bubbly, and the potatoes are tender when pierced with a fork.
  7. Garnish & Serve: Remove from the oven. Sprinkle paprika over the casserole before serving for a touch of color.
