This Loaded Taco Beef Casserole delivers all the vibrant flavors of a taco bar in a convenient, hearty bake. Layers of seasoned ground beef, black beans, corn, and crunchy tortilla chips are topped with plenty of melted cheddar cheese, creating a satisfying and family-friendly meal perfect for any weeknight.

Loaded Taco Beef Casserole

Ingredients:

Ingredient Quantity
Ground beef 1 pound
Taco seasoning 1 packet
Salsa 1 cup
Black beans, drained and rinsed 1 (15-ounce) can
Frozen corn 1 cup
Crushed tortilla chips 2 cups
Shredded cheddar cheese 2 cups
Sliced black olives 1/2 cup
Chopped green onions 1/4 cup
Chopped fresh cilantro 1/4 cup (optional)

Instructions:

  1. Preheat Oven & Brown Beef: Preheat your oven to 350°F (175°C). In a large skillet, cook the ground beef over medium heat until it is browned. Drain any excess fat from the skillet.
  2. Season Beef Mixture: Add the taco seasoning packet and salsa to the browned beef, stirring to combine. Let the mixture simmer for a few minutes until it thickens slightly.
  3. Combine Beef, Beans, and Corn: In a large mixing bowl, combine the seasoned beef mixture with the drained and rinsed black beans and frozen corn. Stir well to combine.
  4. Layer the Casserole:
    • Spread half of the crushed tortilla chips evenly in the bottom of a 9×13-inch baking dish.
    • Layer the beef, black bean, and corn mixture evenly over the chips.
    • Sprinkle with half of the shredded cheddar cheese.
    • Add the remaining crushed tortilla chips on top of the cheese layer, followed by the rest of the shredded cheddar cheese.
    • Sprinkle the sliced black olives and chopped green onions over the very top of the casserole.
  5. Bake: Bake in the preheated oven for 20-25 minutes, or until the cheese is completely melted and bubbly, and the casserole is heated through.
  6. Cool & Garnish: Remove from the oven and let it cool slightly before serving. Garnish with chopped fresh cilantro, if desired.
