Note: If using self-rising flour, omit the baking powder and salt. If using unsalted butter, add an extra ¼ tsp of salt to the dry ingredients.

- Preheat Oven: Preheat your oven to 400°F (200°C).
- Combine Dry Ingredients & Butter: In a large mixing bowl, combine the flour, baking powder, and salt. Add the butter in small pieces.
- Cut in Butter: Using your hands or a pastry blender, work the butter into the flour mixture until it resembles coarse crumbs, with the butter pieces being about the size of peas.
- Add Milk: Pour in the milk and combine with a wooden spoon until just incorporated. Be careful not to overmix the dough; a few lumps are fine. Overmixing can lead to tough biscuits.
- Roll and Cut Dough: Turn the dough out onto a lightly floured surface. Gently roll out the dough to about ¾ inch thick. Using a biscuit cutter or cookie cutter, cut out your biscuits.
- Arrange on Baking Sheet: Place each biscuit onto an ungreased cookie sheet or cast-iron skillet. For a higher rise, make sure the biscuits are touching each other on the pan.
- Bake: Bake for 10 minutes or until the tops are golden brown and the biscuits are cooked through.
