This Toffee Butterscotch Cake is an incredibly moist and flavorful dessert that’s surprisingly easy to make. A doctored-up yellow cake is infused with a rich butterscotch-condensed milk mixture, then topped with whipped topping and crunchy toffee bits for a truly decadent treat.

- Preheat Oven and Prepare Pan: Preheat your oven to 350°F (175°C). Line a 9×13 inch baking pan with foil for easier cleanup, and then spray the foil with cooking spray. Set aside.
- Prepare Cake Batter: In a large bowl, add the yellow cake mix, large eggs, water, and vegetable or canola oil. Using a handheld electric mixer, mix on high speed for about 2 minutes, or until the batter is smooth and well combined.
- Bake Cake: Pour the cake batter evenly into the prepared baking pan. Bake the cake for about 23 to 25 minutes, or until a toothpick inserted into the center of the cake comes out clean.
- Poke Holes in Cake: Immediately after taking the cake out of the oven, use the blunt end of a wooden spoon (or a fork, for smaller holes) to poke about 75 holes evenly over the entire surface of the hot cake. Poke nearly to the bottom of the cake to allow the sauce to seep in. Set the cake aside.
- Prepare Butterscotch Mixture: To a medium bowl, add the butterscotch sundae syrup or ice cream topping and half of one 14-ounce can of sweetened condensed milk. Whisk these two ingredients together until they are well combined and smooth.
- Pour Mixture Over Cake: Slowly and evenly pour the butterscotch-condensed milk mixture over the entire surface of the poked cake. Use a spatula to gently spread the mixture back and forth as necessary to encourage it to sink down into all the holes.
- Chill Cake: Cover the cake loosely with plastic wrap or foil and place it in the refrigerator for at least 2 hours, or until it is thoroughly chilled. For a make-ahead option, this cake will keep well in the refrigerator for a couple of days before serving.
