Instructions:
- Preheat Oven and Prepare Dish: Preheat your oven to 350°F (175°C) and grease a 9×9 inch baking dish.
- Combine Sugar and Butter: In a large mixing bowl, add the granulated sugar and the melted butter. Mix with an electric mixer for about 1 minute, or until the mixture appears light and slightly airy.
- Add Eggs and Vanilla: Add the eggs to the sugar and butter mixture one at a time, beating well after each addition until fully incorporated. Stir in the vanilla extract.
- Sift Dry Ingredients: In a separate small bowl, sift together the cake flour, baking powder, and salt. Sifting helps to ensure a tender crumb.
- Combine Wet and Dry: Gradually add the sifted dry ingredients to the wet ingredients, mixing on low speed until just combined. Be careful not to overmix, as this can make the cake tough.
- Fold in Sour Cream: Gently fold in the sour cream until it is evenly incorporated into the batter. The batter will be smooth and slightly thick.
- Transfer to Baking Dish and Top: Pour the cake batter into the prepared 9×9 inch baking dish and spread it evenly. Sprinkle the remaining 2 tablespoons of granulated sugar evenly over the top of the batter.
- Bake: Bake in the preheated oven for 30 to 35 minutes, or until a toothpick inserted into the center of the cake comes out clean. The top should be golden brown.
- Cool and Slice: Allow the French Butter Cake to cool completely in the baking dish before slicing and serving. Enjoy this rich and tender cake! It’s delicious on its own or can be served with fresh fruit or a dollop of whipped cream.
