Diced tomatoes with green chilies, drained 1 can (10 oz)
Ranch-style beans 1 can (15 oz)
Corn kernels (fresh, canned, or frozen) 1 cup
Fritos, divided 1 bag (10.25 oz)
Shredded cheddar cheese 1 ½ cups

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Create the base by spreading ¾ of the Fritos in a 9×13 inch baking dish.
  3. Brown the beef: In a skillet over medium-high heat, cook the ground beef and chopped onion for 7–10 minutes. Drain excess fat.
  4. Season and mix: Stir in taco seasoning, then add diced tomatoes, ranch-style beans, and corn. Mix well.
  5. Layer the ingredients: Spread the beef mixture evenly over the Fritos in the baking dish.
  6. Add the cheese: Sprinkle shredded cheddar cheese evenly over the beef layer.
  7. Bake: Cook for 15–20 minutes, until the cheese is melted and bubbly.
  8. Finish and serve: Remove from the oven, sprinkle with the remaining Fritos, and top with sour cream, jalapeños, or chopped tomatoes for an extra kick.
