Ingredients:

Ingredient Quantity
Butter (room temperature) 1 cup
Powdered sugar 1 cup
Vanilla extract 1 ½ teaspoons
All-purpose flour 2 ½ cups
Salt ½ teaspoon
Optional: food coloring (as desired)
Optional: mint/almond extract ½ teaspoon (as desired)

Instructions:

  1. Combine butter and sugar: In a large mixing bowl, add the room temperature butter and powdered sugar. Mix until fully combined and smooth.
  2. Add extracts: Mix in the vanilla extract and any optional extract (mint or almond) you are using.
  3. Combine dry ingredients: Add the all-purpose flour and salt to the mixture. Mix until well combined. If using food coloring, add it at this point and mix until evenly distributed.
  4. Form dough logs: Roll the dough into two logs, each about 2.5 inches in diameter.
  5. Chill the dough: Tightly wrap the logs in plastic wrap and place them in the freezer for at least 90 minutes.
  6. Preheat the oven: When ready to bake, preheat the oven to 375 degrees F (190 degrees C). Line a baking sheet with parchment paper.
  7. Slice the cookies: Remove the dough logs from the freezer and slice them into rounds about ¼-inch thick.
  8. Arrange on baking sheet: Evenly arrange the cookie slices on the prepared baking sheet.
  9. Bake: Bake the cookies for 7-9 minutes, or until the edges just begin to brown.
  10. Cool: Allow the cookies to cool completely on the baking sheet before enjoying or storing them.
