This comforting and flavorful Slow Cooker Creamy Potato Bacon Soup is a perfect warm meal for chilly days. It combines the savory taste of bacon with tender potatoes and a rich, creamy broth, all cooked to perfection in your slow cooker.

Ingredients:

Ingredient Quantity
Bacon, cut into ½ inch pieces 6 slices
Onion, finely chopped 1
Condensed chicken broth 2 (10.5 ounce) cans
Water 2 cups
Potatoes, diced 5 large
Salt ½ teaspoon
Dried dill weed ½ teaspoon
Ground white pepper ½ teaspoon
All-purpose flour ½ cup
Half-and-half cream 2 cups
Evaporated milk 1 (12 fluid ounce) can

Instructions:

  1. Cook bacon and onion: Place the bacon pieces and finely chopped onion in a large, deep skillet. Cook over medium-high heat until the bacon is evenly browned and the onions are softened. Drain off any excess grease.
  2. Add to slow cooker: Transfer the cooked bacon and onion mixture to a slow cooker. Stir in the condensed chicken broth, water, diced potatoes, salt, dried dill weed, and ground white pepper.
  3. Slow cook: Cover the slow cooker and cook on Low for 6 to 7 hours, stirring occasionally.
  4. Prepare creamy mixture: In a small bowl, whisk together the all-purpose flour and half-and-half cream until smooth.
  5. Add creamy mixture and evaporated milk: Stir the flour and half-and-half mixture into the soup in the slow cooker, along with the evaporated milk.
  6. Final cook: Cover the slow cooker again and cook for another 30 minutes, or until the soup has thickened slightly and the potatoes are very tender.
  7. Serve: Ladle the creamy potato bacon soup into bowls and serve hot. Enjoy!
