Instructions:
- Preheat Oven and Prepare Pan: Preheat oven to 325°F (165°C). Grease an 8×4-inch loaf pan with butter or nonstick spray. Set aside.
- Cream Butter and Sugar: In a large bowl, beat the butter and granulated sugar with an electric mixer until light and fluffy, about 3 minutes.
- Add Eggs and Vanilla: Add the eggs, one at a time, beating well after each addition. Beat in the vanilla extract.
- Combine Dry Ingredients: In a separate bowl, whisk together the flour, salt, and baking powder.
- Combine Wet and Dry Ingredients: Add 1/2 of the flour mixture to the butter mixture, followed by the sour cream, then the rest of the flour mixture. Mix until just combined.
- Prepare Cinnamon Swirl: Transfer 1 cup of the batter to another medium bowl. Add the brown sugar, cinnamon, and milk for the swirl. Stir to combine.
- Layer Batter: Spoon a thin layer of the basic batter in the bottom of the prepared loaf pan. Dollop spoonfuls of the cinnamon batter on top. Top with the remaining basic batter.
- Swirl Batter: Smooth out the top and use a long skewer or knife to lightly swirl the batters together. Run through the batter a few times from side to side.
- Prepare Topping: In a clean bowl, combine the brown sugar and cinnamon for the topping.
- Sprinkle Topping: Sprinkle the cinnamon sugar topping over the top of the loaf.
- Bake: Bake until a toothpick inserted into the center comes out clean, 55-65 minutes.
- Cool: Let the loaf cool in the pan for 10 minutes. Then, run a knife around the edge and remove it to a wire rack to cool completely.
- Slice and Serve: Let the loaf cool completely before slicing and serving. Enjoy!
