Ingredients:

Ingredient Quantity
Russet potatoes, scrubbed and thinly sliced 4 medium (about 1/8-inch thick)
Bacon, chopped into 1-inch pieces 6 slices
Olive oil 1 tablespoon
Salt 1/2 teaspoon
Black pepper 1/4 teaspoon
Fresh chives or parsley, chopped 2 tablespoons

Instructions:

  1. Preheat your oven to 400°F (200°C). Line a large rimmed baking sheet with parchment paper or foil.
  2. Place the thinly sliced potatoes in a large bowl.
  3. Drizzle the potatoes with olive oil, and season with salt and black pepper.
  4. Toss the potatoes until they are evenly coated with the oil and seasonings.
