French Onion Soup – Don’t lose this recipe

This recipe provides a classic method for making French Onion Soup, a comforting and flavorful dish. It features caramelized onions, rich chicken broth, and a creamy white sauce, topped with melted cheese and crusty bread.

Yellow Sweet Onions (thinly sliced) 2 cups
Butter 2 tablespoons
Chicken Broth (15-ounce can) 1 can
Salt 1/4 teaspoon
Black Pepper (freshly ground) 1/4 teaspoon
Chicken Bouillon Cubes 2
Velveeta Cheese (cubed or shredded) 1/4 cup
Thick White Sauce (see recipe below) 1 1/2 – 1 3/4 cups
Shredded Cheddar Cheese For garnish

For the White Sauce

Flour 3 tablespoons
Salt 1/4 teaspoon
Whole Milk 1 1/2 cups

Instructions:

1. Make the White Sauce:

  • In a 1-quart saucepan, melt the butter over medium heat.
  • Add the flour and cook, stirring constantly, until the mixture turns thick and begins to pull away from the sides of the pan. This is called a roux.
  • Gradually whisk in the milk, a little at a time, stirring continuously to prevent lumps.
  • Add salt and continue to cook and stir until the sauce thickens and reaches a pudding-like consistency.
  • Remove the saucepan from heat and set aside.

2. Prepare the Soup:

  • In a 2-quart saucepan, melt 3 tablespoons of butter over low to medium heat.
  • Add the sliced onions and cook, stirring frequently, until they soften and become translucent but not browned.
  • Add the chicken broth, chicken bouillon cubes, salt, and pepper to the pot. Stir well to combine and bring to a simmer.
  • Stir in the prepared white sauce and Velveeta cheese.
  • Simmer over low heat, stirring constantly, until the cheese is melted and all ingredients are well blended. The white sauce might thicken as it warms.
  • Reduce heat to low and continue to simmer for an additional 30-45 minutes.

3. Serve:

  • Ladle the hot soup into oven-proof bowls.
  • Top each bowl with a generous amount of shredded Cheddar cheese.
  • Broil under the oven’s broiler until the cheese is melted and bubbly.
  • Serve immediately with slices of warm, crusty bread.
