Instructions:
1. Make the White Sauce:
- In a 1-quart saucepan, melt the butter over medium heat.
- Add the flour and cook, stirring constantly, until the mixture turns thick and begins to pull away from the sides of the pan. This is called a roux.
- Gradually whisk in the milk, a little at a time, stirring continuously to prevent lumps.
- Add salt and continue to cook and stir until the sauce thickens and reaches a pudding-like consistency.
- Remove the saucepan from heat and set aside.
2. Prepare the Soup:
- In a 2-quart saucepan, melt 3 tablespoons of butter over low to medium heat.
- Add the sliced onions and cook, stirring frequently, until they soften and become translucent but not browned.
- Add the chicken broth, chicken bouillon cubes, salt, and pepper to the pot. Stir well to combine and bring to a simmer.
- Stir in the prepared white sauce and Velveeta cheese.
- Simmer over low heat, stirring constantly, until the cheese is melted and all ingredients are well blended. The white sauce might thicken as it warms.
- Reduce heat to low and continue to simmer for an additional 30-45 minutes.
3. Serve:
- Ladle the hot soup into oven-proof bowls.
- Top each bowl with a generous amount of shredded Cheddar cheese.
- Broil under the oven’s broiler until the cheese is melted and bubbly.
- Serve immediately with slices of warm, crusty bread.
