Ingredients:

Red potatoes, scrubbed and cut into 2-3″ pieces 1.5 pounds
Lean ground beef 2.5 pounds
Onion, finely chopped 1 large
Ketchup 3/4 cup
Crushed butter crackers 3/4 cup
Eggs 2
Salt 2 teaspoons
Ground mustard 1 teaspoon
Pepper 1 teaspoon
Garlic powder 1/4 teaspoon

Instructions:

  1. Prepare the potatoes: Place the cut potatoes in the bottom of a 6-quart slow cooker.
  2. Mix the meatloaf ingredients: In a large bowl, combine the ground beef, onion, ketchup, crushed crackers, eggs, salt, mustard, pepper, and garlic powder. Mix well.
